Recently, I had some blueberries in my refrigerator just begging to be turned into something sweet and delicious.I decided to make this simply delicious moist coffee cake studded with blueberries and topped with a crunchy almond streusel.

Ingredients
  • ¼ cup (60ml) butter
  • ¾ cup (180ml) white sugar
  • 2 large eggs
  • 2 tsps baking powder
  • ½ tsp salt
  • 2 cups blueberries (fresh or frozen)
  • ½ cup (125ml) milk
  • 2 cups plain flour
For the topping:
  • ½ cup (125ml) brown sugar
  • 4 tbles flour
  • 1 tsp ground cinnamon
  • ½ cup sliced almonds
  • 3 tbles butter
Instructions
  1. Preheat oven to 180°C
  2. Grease and flour a 10 inch springform pan.
  3. Sift together the flour, baking powder and salt. Keep it aside.
  4. In a large bowl, cream together the butter and sugar until it is light and fluffy.
  5. Beat in the eggs.
  6. Fold in the flour mixture alternately with the milk.
  7. Mix it until it is fully incorporated.
  8. Stir in the blueberries.
  9. Pour batter into prepared pan.
  10. For the topping
  11. In a small bowl, combine brown sugar, flour,cinnamon and chopped almonds.
  12. Cut in butter until crumbly.
  13. Sprinkle over the batter.
  14. Bake in the preheated oven for 45 to 50 minutes,
