Ingredients
  • ½ cup (125ml) maize meal or semolina
  • ½ (125ml) cup cake flour
  • ½ cup (125ml) chick pea flour
  • 3 teas (15ml) baking powder
  • 1 teas (5ml) salt
  • 1 teas (5ml) mild curry powder
  • 1 400gr tin cream style sweet corn
  • 3 cups finely chopped spinach
  • 1 large onion coarsely grated
  • 1 teas (5ml) garlic paste
  • 2 green chillies finely chopped
  • ½ cup (125ml) milk
  • ½ cup (125ml) sunflower oil
  • 3 eggs lightly beaten
  • sesame seeds for decorating

Instructions
  1. Preheat oven to180 degree C.
  2. Grease a 25cm loose bottom quiche baking pan.
  3. Sieve the maize meal/semolina, chick pea flour, and cake flour in a big bowl.
  4. Add baking powder, salt and curry powder and mix well.
  5. Add the corn,spinach, onion,garlic paste and chopped green chillies and mix well.
  6. Mix the milk, oil and eggs together well and add to the flour and veg mixture.
  7. The mixture will look like a thick batter.
  8. Pour the mixture into the pan.
  9. Decorate with sesame seeds and bake for 45-50 mins.
  10. Insert a knife to check if cooked properly.
  11. Leave it to cool and serve
Notes
Chickpea flour is available at most supermarkets,health food stores or Indian grocery stores.
