CHICKEN and BROCCOLI BAKE

This recipe is an easy and wholesome weeknight dinner that the whole family will love and it's perfect for the cooler autumn months. It's a great option to prepare ahead for busy days!
Ingredients
  • 600gr Chicken Breast Fillets cubed
  • 1 Onion finely chopped
  • 3 tbles Butter
  • 2 Garlic Cloves finely chopped
  • 500 g Broccoli Florets
  • 1 Red Pepper cubed
  • Salt to taste
  • ½ tsp Red Chilli Flakes
  • ½ tsp Paprika
  • 250 g Smooth Cottage Cheese
  • 100gr Mature Cheddar Cheese grated
Instructions
  1. Heat the oven to 180° C.
  2. Spray and cook a rectangular baking dish.
  3. Heat the butter in a saucepan.
  4. Add onion and cook on medium heat until soft and translucent.
  5. Add garlic and chicken cubes and sauté until tender. Approx 12-15mins.
  6. Add broccoli florets, red pepper cubes, salt, red chilli flakes,paprika and stir fry for another 5 mins.
  7. Remove from the heat and add tub of cottage cheese and half of the cheddar cheese and stir through the chicken and broccoli mix.
  8. Transfer to the baking dish
  9. Add the rest of the grated cheese over the top.
  10. Bake approximately for 30 minutes until golden brown.
Serve with a green salad and garlic bread
