Mielie Meal or pap is a classic South African staple food in South Africa. It is very popular at braais served with a rich tomato relish and  South Africa’s favourite, yummy juicy boerewors.

Mielie meal is very similar to the well-known grain, polenta but it is white in colour. In this recipe, the mielie meal or pap is cooked quite stiff, which is perfect for mopping up the gravy and the meat juices. This popular starch would not be the same without the traditional tomato topping also known as Ushathini. The ingredients are simple, tomatoes fresh or canned, onions and spices. Enjoy at your next braai or barbeque!

PAP AND TOMATO RELISH WITH BOEREWORS

Ingredients
  • 500gr Boerewors
For the Pap
  • • 1 Cup Maize Meal
  • • 3 Cups Water
  • • Salt to taste
For the Tomato Relish
  • • 1 Onion, large chopped
  • • 2 Tbsp Olive Oil
  • • 1 Green Chilli Sliced
  • • 1 Garlic Clove Chopped
  • • 1 410gr Can Chopped Tomatoes
  • • 2 Tbles Tomato Sauce
  • • 2 Tsp. Sugar (optional)
  • • Salt to Taste
Instructions
  1. Method
For the Pap
  1. In a bowl mix the maize meal with 1 cup of water until smooth and lump-free.
  2. Bring the remainder of the water and salt to a boil in a large heavy saucepan.
  3. Add the mixture to the boiling water and stir till the mixture becomes thick.
  4. Reduce the heat and simmer for about 20-30 minutes stirring occasionally until completely soft and fluffy.
For the Boerewors…
  1. Grill the Boerewors in a pan over medium-high heat for about 10-15 minutes, turning often or until cooked to your liking or grill the boerewors in the airfryer for about10mins on 200°C until cooked to your liking.
For the Tomato Relish
  1. Heat the oil in a saucepan on medium heat. Cook the onions with the green chilli and garlic until soft and translucent. Add the canned chopped tomatoes, tomato sauce, sugar and salt.
  2. Cook for approx. 15-20 minutes or until the sauce thickens, stirring from time to time.
To Serve
  1. Place the boerewors on a platter and serve it alongside the pap & the tomato relish and a side salad.
