PIZZA MUFFINS

The whole family will love these pizza muffins and they make perfect lunchboxes fillers or to feed hungry kids after school. This recipe is so easy even the kids will love making them!
Ingredients
- 1 cup cubed chicken fillet cooked
- 1 cup cheese - mozzarella or mature cheddar grated
- 1 tsp garlic powder
- ½ green pepper – cubed
- ½ red pepper cubed
- ½ cup fresh basil sliced into ribbons
- ½ cup spring onions finely chopped
- 1 tsp italian herbs
- 2 x-large eggs – lightly beaten
- ½ cup self raising flour
- 4 tablespoons mayonnaise
- 4 tablespoons tomato sauce
- salt and freshly ground black pepper to taste
Instructions
- Mix all ingredients lightly in a large dish.
- Do not over-mix as mixture should be slightly lumpy.
- Place about a heaped tablespoon in greased muffin pans and bake for 25-30 mins or until golden brown
