CouscousĀ is a North African dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew spooned on top. In this recipe I have used the couscous to make a delicious Moroccan inspired savoury bite filled with zucchini, carrots and corn.
It makes a great appetizer…perfect for entertaining!

Couscous is a North African dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew spooned on top. In this recipe I have used the couscous to make a delicious Moroccan inspired savoury bite filled with zucchini, carrots and corn.
Ingredients
  • 2 cups Couscous cooked
  • 3 Eggs beaten
  • ½ cup Oil
  • 1 cup Carrots finely grated
  • 1 cup Corn kernels
  • 1 cup Zucchini grated
  • 1 cup Cheese mature cheddar grated
  • ½ cup Onion finely chopped
  • ½ cup Coriander chopped
  • 1 tsp Baking powder
  • 1 tsp Garlic powder
  • 1 tsp. Chilli powder
  • ½ tsp. Tumeric powder
  • Salt to taste
Instructions
  1. Preheat oven to 180Ā°C.
  2. Prepare the couscous according to the instructions on the packet and keep aside.
  3. Combine the couscous with the rest of the ingredients in a large bowl and mix thoroughly.
  4. Lightly grease 2 mini muffin pans and evenly spoon mixture into muffin wells.
  5. Bake 15-20 minutes, until muffins are golden brown.
  6. Remove and let cool for 10 minutes.
