LEEK AND POTATO SOUP

This leek and potato soup is simple and delicious just like a creamy bowl of perfectly seasoned comfort food! A smooth, creamy vegetable soup that's full of flavour. Make it into a meal with plenty of crusty bread or some of our delicious cheesy sweet corn fritters.
Ingredients
  • 3 tbsps Butter
  • 1 Onion Medium Chopped
  • 2 Potatoes, Large Cubed
  • 3 cups Leeks Sliced
  • 3 Cloves Garlic Sliced
  • 5 cups Vegetable Stock
  • 1 cup Milk or Half Milk and Half Cream
  • Salt and Freshly Ground Black Pepper
Instructions
  1. Heat the butter in a large pot and add the onions, potatoes, leeks and garlic.
  2. Cook with the lid on for approx 10 minutes until starting to soften.
  3. Add the vegetable stock and bring to the boil.
  4. Season well and simmer until the vegetables are tender.
  5. Cool for a few minutes, then pulse with a hand blender until smooth.
  6. Finally, add the milk and cream and bring to a simmer for a few more minutes and adjust the seasoning if needed.
  7. Serve hot, garnished with chives, or some grated cheese.
