If you are looking for an easy-peasy cake recipe, look no further. This delicious apple cake is loaded with fresh apples. It's light and fluffy and very simple to make. It will satisfy your sweet tooth and it's sure to become a family favourite.
Ingredients
  • ¾ cup Plain Flour
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • 4 cups of Apples (I used Gala and Granny Smith)
  • 3 Eggs
  • ¾ cup Sugar
  • 2 tsp Vanilla Extract
  • 1 tsp Lemon Zest
  • ½ cup Butter (melted and cooled)
Instructions
  1. Preheat the oven to 180C. Generously butter a 20 cm springform pan and put it on a baking sheet.
  2. Whisk the flour, baking powder, and salt together in small bowl.
  3. Peel and core the apples and cut the apples into smallish chunks.
  4. In a bowl, beat the eggs with a whisk until they’re foamy. Pour in the sugar and whisk for a minute or so to blend. Whisk in the vanilla extract and the lemon zest.
  5. Whisk in half the flour and when it is incorporated, add half the melted butter, followed by the rest of the flour and the remaining butter, mixing gently after each addition so that you have a smooth, thick batter.
  6. Fold in the apples, ensuring that the fruit is completely covered with the batter.
  7. Scrape the mix into the pan and poke it around a little with the spatula so that it’s evenish.
  8. Slide the pan into the oven and bake for 50 to 60 minutes, or until the top of the cake is golden brown and a knife inserted deep into the centre comes out clean.
  9. Allow the cake to cool until it is just slightly warm or at room temperature.
Serve warm with custard or vanilla ice cream!
