This delicious casserole makes an excellent meal on its own or as a side dish, it’s very low in carbs and it’s so easy to make.

How to Make Cauliflower Bake

Start by steaming your cauliflower until just tender. Then drain well because you don’t want any added moisture in this dish. In the same pot that the cauliflower was steamed in over medium-low heat, mix together the cream cheese, sour cream, cheddar cheese, mozzarella cheese, garlic powder and onion powder until smooth and creamy.  Slowly and gently stir in the steamed cauliflower, chives and salt and freshly ground pepper to taste.

Spoon into a casserole dish and top with more cheese. Bake until the cheese is melted and gooey.  Garnish with chives and serve hot.

Ingredients
  • 1 Large Cauliflower Cut into Bite Size Pieces (Approx 1 Kg)
  • 230 Gr Tub Cream Cheese
  • ½ Cup Sour Cream
  • ½ Cup Sharp Cheddar Grated
  • ½ Cup Mozzarella Cheese Grated
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • ¼ Cup Chopped Fresh Chives (Reserve One Tablespoon for the Top)
  • Salt & Freshly Ground Pepper to Taste
  • ½ Cup Cheese for Topping
Instructions
  1. Preheat oven to180 °C. Spray a baking or casserole dish with cooking spray.
  2. Start by steaming your cauliflower in a large pot until just tender or no longer than 10 minutes. Then drain well in a colander because you don’t want any added moisture in this dish.
  3. In the same pot that the cauliflower was steamed in over medium-low heat, mix together the cream cheese, sour cream, cheddar cheese, mozzarella cheese, garlic powder and onion powder until smooth and creamy. This should take no longer than 5 minutes.
  4. Slowly and gently stir in the steamed cauliflower, chives and salt and freshly ground pepper to taste.
  5. Spoon into a casserole dish and top with remaining cheese.
  6. Bake uncovered for 15-20 minutes or until the cheese is melted.
  7. Top with remaining chives and serve hot.
