These moreish muffins have a lovely nutty flavour and are light and moist. Perfect for lunch boxes or weekend treats.
Banana Muffins

Ingredients
- 1 cup cake flour
- ½ cup nutty wheat flour
- ½ cup desiccated coconut
- ¾ cup brown sugar
- 1 cup mashed ripe bananas
- ⅓ cup melted butter
- 2 eggs
- ⅓ cup greek yoghurt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp mixed spice
- ¼ tsp salt
Instructions
- In a medium bowl mix flour,coconut, baking powder, baking soda, salt, and spices and set aside.
- In a separate bowl mix sugar, eggs, melted butter, and mix well combined.
- Add mashed banana and greek yoghurt and mix well.
- Fold in flour mixture gradually into the liquid ingredients until combined.
- Fill greased muffin tins two-thirds of the way full.
- Top with garnishing.
- Bake in a preheated 180°C oven for 20-25 minutes.
