Chakalaka is a spicy relish which originated in the townships of South Africa! It is normally eaten with a traditional meal,but nowadays it’s become a staple at South African braais! This recipe is useful to use up all left over vegetables in your fridge. Everyone’s recipe is different and there is a wide range of Chakalaka’s out there ranging from mild to firey hot! Ingredients
- • 3 tbles Oil
- • 1 chopped Onion
- • 2 tsp Ginger chopped
- • 1 tsp Garlic chopped
- • 2 tsp Curry Powder
- • ½ Red Chilli Flakes (optional)
- • 4 Carrots coarsely grated (I used a mandolin)
- • 1 Green Pepper sliced
- • 1 Red Pepper sliced
- • Salt to taste
- • 2 tsp Sugar
- • 1 400gr can diced Tomatoes
- • 1 400gr can White Beans (I used cannellini beans)
- • ⅓ cup Coriander chopped
Instructions
- Add oil to a frying pan.
- Add chopped onion, ginger and garlic and fry until soft and translucent
- Add curry powder and stir fry for another minute
- Add the carrots and stir fry for another minute. Add sliced peppers, and stir.
- Add chopped tomato, salt and sugar and cook for about 10 mins over a medium heat.
- Add white beans and cook for a further 5 mins.
- Garnish with chopped coriander
