Chakalaka is a spicy relish which originated in the townships of South Africa! It is normally eaten with a traditional meal,but nowadays it’s become a staple at South African braais! This recipe is useful to use up all left over vegetables in your fridge.  Everyone’s recipe is different and there is a wide range of Chakalaka’s out there ranging from mild to firey hot! Ingredients
  • • 3 tbles Oil
  • • 1 chopped Onion
  • • 2 tsp Ginger chopped
  • • 1 tsp Garlic chopped
  • • 2 tsp Curry Powder
  • • ½ Red Chilli Flakes (optional)
  • • 4 Carrots coarsely grated (I used a mandolin)
  • • 1 Green Pepper sliced
  • • 1 Red Pepper sliced
  • • Salt to taste
  • • 2 tsp Sugar
  • • 1 400gr can diced Tomatoes
  • • 1 400gr can White Beans (I used cannellini beans)
  • • ⅓ cup Coriander chopped
Instructions
  1. Add oil to a frying pan.
  2. Add chopped onion, ginger and garlic and fry until soft and translucent
  3. Add curry powder and stir fry for another minute
  4. Add the carrots and stir fry for another minute. Add sliced peppers, and stir.
  5. Add chopped tomato, salt and sugar and cook for about 10 mins over a medium heat.
  6. Add white beans and cook for a further 5 mins.
  7. Garnish with chopped coriander
