This is a budget friendly quick and easy delicious recipe perfect for a midweek family meal. Mouth-watering cheesy tuna pasta topped with grated cheddar and baked.
Ingredients
- 250gr penne pasta
- 50gr butter
- 1 medium onion finely chopped
- 1 green chilli chopped
- 1 clove garlic sliced
- 250gr chopped mushrooms
- 100g corn
- 2 cups finely chopped spinach
- 2 x 170g cans tuna, drained
- 200ml ready made cheese sauce
- salt and black pepper to taste
- 50gr cheddar, grated
Instructions
- Heat oven to 180°C
- Bring a pan of water to the boil. Add the pasta and cook, following the instructions on the pack , until tender.
- In a large sauce pan, melt butter and add onion and braise until soft and translucent.
- Add chilli, garlic and mushrooms.
- Saute until the mushrooms start to soften, approximately 2 minutes.
- Add the corn,spinach and tuna and stir until the spinach has wilted.
- Stir through the cheese sauce until well blended.
- Season with salt and pepper to taste.
- Transfer to a baking dish and top with the grated cheese.
- Bake for 15-20 mins until the cheese on top is golden and starting to brown.
