CHEESY SPINACH MUFFINS

Packed with cheesy deliciousness these gorgeous savoury muffins are the perfect alternative for breakfast or lunch box snack. Bake these in advance and you’ll have a protein-rich meal that’s ready when you are.
Ingredients
- 3 Tbles Olive Oil
- 1 Medium Onion (Finely Chopped)
- 300g Pkt Baby Spinach (Finely Chopped)
- Salt and Black Pepper to Taste
- 6 eggs
- 3 Tbles Cream Cheese
- 1 cup Mature Cheddar Cheese (Grated)
- 100g Feta (Coarsely Crumbled)
- Sesame Seeds for Decorating
Instructions
- Preheat the oven to 180º C.
- Prepare muffin pan with cooking spray and line with baking paper squares to form a muffin case.
- Heat olive oil in a large pan over medium-high heat.
- Add onions and sauté until onions are soft and translucent.
- Add spinach and sauté for one minute.
- Remove onions and spinach from heat and let cool.
- In a large bowl, whisk together the eggs salt, pepper the and cream cheese.
- Stir through the mature cheddar cheese and feta cheese.
- Add the spinach and onion mix to the egg mixture and fold through.
- Spoon spinach mixture equally into each muffin cup.
- Scatter over the sesame seeds and bake for 25 minutes until golden and puffed.
Enjoy on it's own or with a green salad!
