CHEESY SWEET CORN FRITTERS

  Make these crispy sweetcorn fritters for dinner and pack the rest for lunch. These tasty fritters make a delicious starter or snack and can be ready in a matter of minutes. Serve your sweetcorn fritters with a sweet chilli sauce or for an added kick with some chilli mayo.
 Ingredients
 - 410 g Can Cream Style Sweetcorn
 - 1 Cup Grated Cheddar Cheese
 - ½ Cup Red Pepper finely Chopped
 - ½ Cup Onion finely chopped
 - 1 Cup Baby Spinach finely chopped
 - 1 tsp Green Chilli Paste or ½ tsp paprika
 - Salt to taste
 - 2 Eggs
 - ½ Cup Milk
 - 1½ Cups Self Raising Flour
 - Oil for frying
 
Instructions
 - In a large bowl, mix together the corn, grated cheese, red pepper, chopped onion, chopped spinach, green chilli paste or paprika and salt.
 - Add the eggs and milk. Stir until well combined, then mix in the flour.
 - In a large sauté pan, heat ½ inch of oil over medium heat. Drop spoonfuls of batter into the oil to form fritters, flattening the tops slightly.
 - Do not crowd the pan.
 - Cook for 2 minutes on each side, or until golden. Drain the fritters on paper towels.
 - Repeat with the rest of the batter, adding more oil if necessary.
 - Serve warm, with your favourite dipping sauce.
