Ingredients
- 600gr Chicken Breast Fillets cubed
- 1 Onion finely chopped
- 3 tbles Butter
- 2 Garlic Cloves finely chopped
- 500 g Broccoli Florets
- 1 Red Pepper cubed
- Salt to taste
- ½ tsp Red Chilli Flakes
- ½ tsp Paprika
- 250 g Smooth Cottage Cheese
- 100gr Mature Cheddar Cheese grated
Instructions
- Heat the oven to 180° C.
- Spray and cook a rectangular baking dish.
- Heat the butter in a saucepan.
- Add onion and cook on medium heat until soft and translucent.
- Add garlic and chicken cubes and sauté until tender. Approx 12-15mins.
- Add broccoli florets, red pepper cubes, salt, red chilli flakes,paprika and stir fry for another 5 mins.
- Remove from the heat and add tub of cottage cheese and half of the cheddar cheese and stir through the chicken and broccoli mix.
- Transfer to the baking dish
- Add the rest of the grated cheese over the top.
- Bake approximately for 30 minutes until golden brown.
Serve with a green salad and garlic bread
