I’ve been cooking this for years, and my family really love it. Chicken stir fried with an array of colourful vegetables and rice.
A great tip for making this dish is to have everything ready and on hand before you start cooking as things move quickly once you start.
Chinese rice with chicken

Ingredients
- A glug of olive oil
- 4 chicken breasts sliced
- 2 tsps ginger & garlic paste
- ½ tsp chilli powder
- 2 tbles soya sauce
- 2 tbles lemon juice
- 3 tbles tomato sauce
- 3 tbles sweet chilli sauce
- Salt to taste
- 1 pkt julienne carrots
- 1 250gr punnet sliced mushrooms
- 1 medium red pepper sliced into julienne strips
- 1 medium green pepper sliced into julienne strips
- 4 cups cooked basmati rice
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chicken,ginger and garlic and stir fry for about 5 mins.
- Add chilli powder,soya sauce,lemon juice,tomato sauce, sweet chilli sauce and salt to taste.
- Cook for a further 15 mins until the chicken is tender.
- Add the vegetables and stir through for about 5 mins.
- Stir through the rice and steam over a low heat for about 20 mins
