To celebrate National Milk Tart Day in South Africa today, here’s a recipe for a special Milk Tart (or melk tert) with coconut! Thanks to my late friend Anne for this very yummy milk tart that we used to demand she serve us at every book club she hosted. Anne said at the time: “This recipe has been circulated in our family for about 40 years and has travelled all over the world with friends and family.”

Ingredients
PIE CRUST
  • 125g Butter
  • ½ Cup Sugar
  • 1 Cup Marie biscuits or similar finely rolled
  • 1 Cup Desiccated Coconut
  • ½ Cup Four
  • Pinch of Salt
FILLING:
  • 4 Heaped Tbles Cornflour
  • 3 Eggs Separated
  • ½ Cup Sugar
  • 1 Litre Full Cream Milk
  • 2 Tbles Butter
  • 2 Tsps Vanilla extract
  • Pinch of Salt
TOPPING
  • Biscuit Crumbs and Cinnamon
Instructions
PIE CRUST
  1. Cream sugar and butter, add dry ingredients.
  2. Press into two pie dishes saving some crumbs for garnishing.
FILLING
  1. Mix cornflour and yolks of eggs with half of the sugar (1/4 cup) and 1 cup of the milk.
  2. Bring to boil the rest of the milk with the butter.
  3. Remove from heat and add cornflour mixture.
  4. Return to heat and thicken stirring continuously.
  5. Lastly add stiffly beaten egg whites, vanilla essence, salt and the rest of the sugar.
  6. Pour into bases.
  7. Sprinkle crumbs and cinnamon onto the top of the tarts.
  8. Bake for 20 minutes at 180°C
