CouscousĀ is a North African dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew spooned on top. In this recipe I have used the couscous to make a delicious Moroccan inspired savoury bite filled with zucchini, carrots and corn.
It makes a great appetizer…perfect for entertaining!

Couscous is a North African dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew spooned on top. In this recipe I have used the couscous to make a delicious Moroccan inspired savoury bite filled with zucchini, carrots and corn.
Ingredients
- 2 cups Couscous cooked
- 3 Eggs beaten
- ½ cup Oil
- 1 cup Carrots finely grated
- 1 cup Corn kernels
- 1 cup Zucchini grated
- 1 cup Cheese mature cheddar grated
- ½ cup Onion finely chopped
- ½ cup Coriander chopped
- 1 tsp Baking powder
- 1 tsp Garlic powder
- 1 tsp. Chilli powder
- ½ tsp. Tumeric powder
- Salt to taste
Instructions
- Preheat oven to 180Ā°C.
- Prepare the couscous according to the instructions on the packet and keep aside.
- Combine the couscous with the rest of the ingredients in a large bowl and mix thoroughly.
- Lightly grease 2 mini muffin pans and evenly spoon mixture into muffin wells.
- Bake 15-20 minutes, until muffins are golden brown.
- Remove and let cool for 10 minutes.
