CREAMY BASIL PESTO CHICKEN PASTA

Ingredients
  • 4 Boneless Chicken Breasts Sliced
  • 2 Tsps Chicken Braai Spice or Curry Powder
  • 2 Tsps Garlic Paste
  • Salt to Taste
  • 3 Tbles Olive Oil
  • 1 Onion Sliced
  • 250 gr Mushrooms Sliced
  • 50 Gr Sundried Tomatoes
  • 2 Cups Chicken Stock
  • ¼ Cup Basil Pesto
  • ½ Cup Fresh Cream
  • 200 Gr of Cooked Pasta of Your Choice. (I used Linguine)
  • Handful of Fresh Basil Chopped
Instructions
  1. Rinse and pat dry the chicken. Toss with chicken braai spice and garlic paste.
  2. In a large saucepan over medium-high heat add the oil and sauté the chicken. Turn to brown on all sides. Transfer to a platter and keep warm.
  3. Add a bit more oil if needed and add the sliced onion and sauté for two minutes. Add the sliced mushrooms and sundried tomatoes and continue to cook for 3-4 minutes.
  4. Add the chicken stock and bring to a slow boil. After a few minutes add the pesto and lower heat to simmer. Allow to reduce and thicken for several minutes before adding the cream.
  5. Once the sauce has thickened a bit add the chicken and the cooked pasta and stir through.
  6. Toss through the torn basil leaves and serve hot with crusty bread and a green salad.
