BLUEBERRY CAKE

- ¼ cup (60ml) butter
- ¾ cup (180ml) white sugar
- 2 large eggs
- 2 tsps baking powder
- ½ tsp salt
- 2 cups blueberries (fresh or frozen)
- ½ cup (125ml) milk
- 2 cups plain flour
- ½ cup (125ml) brown sugar
- 4 tbles flour
- 1 tsp ground cinnamon
- ½ cup sliced almonds
- 3 tbles butter
- Preheat oven to 180°C
- Grease and flour a 10 inch springform pan.
- Sift together the flour, baking powder and salt. Keep it aside.
- In a large bowl, cream together the butter and sugar until it is light and fluffy.
- Beat in the eggs.
- Fold in the flour mixture alternately with the milk.
- Mix it until it is fully incorporated.
- Stir in the blueberries.
- Pour batter into prepared pan.
- For the topping
- In a small bowl, combine brown sugar, flour,cinnamon and chopped almonds.
- Cut in butter until crumbly.
- Sprinkle over the batter.
- Bake in the preheated oven for 45 to 50 minutes,
