Chinese rice with chicken

Ingredients
  • A glug of olive oil
  • 4 chicken breasts sliced
  • 2 tsps ginger & garlic paste
  • ½ tsp chilli powder
  • 2 tbles soya sauce
  • 2 tbles lemon juice
  • 3 tbles tomato sauce
  • 3 tbles sweet chilli sauce
  • Salt to taste
  • 1 pkt julienne carrots
  • 1 250gr punnet sliced mushrooms
  • 1 medium red pepper sliced into julienne strips
  • 1 medium green pepper sliced into julienne strips
  • 4 cups cooked basmati rice

Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken,ginger and garlic and stir fry for about 5 mins.
  3. Add chilli powder,soya sauce,lemon juice,tomato sauce, sweet chilli sauce and salt to taste.
  4. Cook for a further 15 mins until the chicken is tender.
  5. Add the vegetables and stir through for about 5 mins.
  6. Stir through the rice and steam over a low heat for about 20 mins
