Place sugar,oil warm water and egg yolks in a bowl and beat until the mixture is thick and cool.
Sift the flour,baking powder,salt and cocoa together 3 times.
Add the sifted ingredients to the oil mixture and fold in with a firm plastic spatula
Whisk the egg whites in a clean bowl until just beginning to form peaks.
Fold into the cocoa mixture.
Divide the cake batter between the sandwich tins and bake in the oven for 30-40 minutes, or until the top is firm to the touch and a skewer inserted into the centre of the cake comes out clean.
Let the cake cool completely before covering with icing.
Ganache Icing
Heat the chocolate and cream in a saucepan over a low heat until the chocolate melts. Remove the pan from the heat and whisk the mixture until smooth, thick and glossy.
Set aside to cool for a while or until thick enough to spread over the cake.
Notes
If using the ganache icing then just make a single layer cake and pour the ganache over.
