This is a budget friendly quick and easy delicious recipe perfect for a midweek family meal. Mouth-watering cheesy tuna pasta topped with grated cheddar and baked.
Ingredients
250gr penne pasta
50gr butter
1 medium onion finely chopped
1 green chilli chopped
1 clove garlic sliced
250gr chopped mushrooms
100g corn
2 cups finely chopped spinach
2 x 170g cans tuna, drained
200ml ready made cheese sauce
salt and black pepper to taste
50gr cheddar, grated
Instructions
Heat oven to 180°C
Bring a pan of water to the boil. Add the pasta and cook, following the instructions on the pack , until tender.
In a large sauce pan, melt butter and add onion and braise until soft and translucent.
Add chilli, garlic and mushrooms.
Saute until the mushrooms start to soften, approximately 2 minutes.
Add the corn,spinach and tuna and stir until the spinach has wilted.
Stir through the cheese sauce until well blended.
Season with salt and pepper to taste.
Transfer to a baking dish and top with the grated cheese.
Bake for 15-20 mins until the cheese on top is golden and starting to brown.
