Using a heavy bottomed pot, melt butter over medium-low heat. Add the onions and cook stirring ocassionally for approx.10 minutes until soft and translucent.
Add the mielies, garlic, chilli flakes and chopped tomatoes and simmer over medium heat for approx 10-15 mins.
Add the chopped red peppers.
Add the chicken stock and cook over low heat for approx. 20 mins.
Mix cornflour with a little cold water and stir through the soup.
Stir in the cream and cook for 5 more minutes for it to heat through thoroughly.
Garnish with chopped basil ribbons
Serve hot!
