This perfect speedy week night chicken dinner, cuts down kitchen time without compromising on taste!. The chicken breasts are delightfully moist and tender and perfectly nestled under a blanket of salsa sauce.
Ingredients
4 boneless chicken breast fillets
salt to taste
1 teas garlic paste
1 teas paprika
1 tablespoon lemon juice
2 tablespoons olive oil
handful of freshly chopped coriander
1 cup of chopped red and green peppers
1 cup of chunky salsa
1 cup grated mozarella cheese
Instructions
Pre-heat oven to 180.C.
Split each chicken breast into 2 and place into a baking dish.
Season with salt, garlic paste, paprika,lemon juice and olive oil.
Add coriander and chopped peppers. Spread the salsa over the top and bake for 30-40 minutes, or until the chicken is cooked through.
Remove chicken from the oven and sprinkle cheese on top. Place it under the grill for 1-2 minutes until the cheese is melted and bubbly.
Garnish with more coriander.
Serve with brown rice and a green salad!
