Couscous is a North African dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew spooned on top. In this recipe I have used the couscous to make a delicious Moroccan inspired savoury bite filled with zucchini, carrots and corn.
Ingredients
2 cups Couscous cooked
3 Eggs beaten
½ cup Oil
1 cup Carrots finely grated
1 cup Corn kernels
1 cup Zucchini grated
1 cup Cheese mature cheddar grated
½ cup Onion finely chopped
½ cup Coriander chopped
1 tsp Baking powder
1 tsp Garlic powder
1 tsp. Chilli powder
½ tsp. Tumeric powder
Salt to taste
Instructions
Preheat oven to 180°C.
Prepare the couscous according to the instructions on the packet and keep aside.
Combine the couscous with the rest of the ingredients in a large bowl and mix thoroughly.
Lightly grease 2 mini muffin pans and evenly spoon mixture into muffin wells.
Bake 15-20 minutes, until muffins are golden brown.
Remove and let cool for 10 minutes.
