Malva Pudding

Ingredients
  • 1 Cup Sugar
  • 1 Egg
  • 1 Tbles Soft Butter
  • 4 Tbles Apricot Jam
  • 1 Cup Milk
  • 2 Tsps Vinegar
  • 2 Tsps Vanilla Essence
  • 1 Cup Cake Flour
  • 1 Tsp Bicarb.
Sauce
  • ½ Cup Fresh Cream
  • 4 Tsps Butter
  • 2 Tbles Sugar
  • 2 Tbles Water
Instructions
  1. Preheat oven to 180°C.
  2. Beat together sugar, egg, butter and jam until fluffy.
  3. Combine milk, vinegar and vanilla.
  4. Sift flour and bicarb and add to mixture alternately with milk.
  5. Pour into muffin pans and bake for approx 20 mins. until firm.
  6. Remove from oven and pour over the sauce.
Sauce
  1. To make the sauce, place all ingredients in a pot and bring to boil.
Notes
Serve with creme anglaise or creamy pouring custard.
