Malva Pudding

- 1 Cup Sugar
- 1 Egg
- 1 Tbles Soft Butter
- 4 Tbles Apricot Jam
- 1 Cup Milk
- 2 Tsps Vinegar
- 2 Tsps Vanilla Essence
- 1 Cup Cake Flour
- 1 Tsp Bicarb.
- ½ Cup Fresh Cream
- 4 Tsps Butter
- 2 Tbles Sugar
- 2 Tbles Water
- Preheat oven to 180°C.
- Beat together sugar, egg, butter and jam until fluffy.
- Combine milk, vinegar and vanilla.
- Sift flour and bicarb and add to mixture alternately with milk.
- Pour into muffin pans and bake for approx 20 mins. until firm.
- Remove from oven and pour over the sauce.
- To make the sauce, place all ingredients in a pot and bring to boil.
Serve with creme anglaise or creamy pouring custard.
