Enjoy this healthy Mediterranean veggie tray bake with halloumi and chickpeas. This roasted vegetable bake is bursting with flavour and the Halloumi is chewy but soft and melts in your mouth. Serve as a meal on its own with some fresh crusty bread. Quick and easy and super delicious!
Ingredients
3 Garlic Cloves (chopped)
2 Red Onions (sliced)
1 Red Pepper (seeded and cubed)
200gr Baby Marrows, (thickly sliced)
200 gr Cocktail Tomatoes
1 400gr Can Chickpeas (drained )
250g Halloumi (sliced)
Balsamic Glaze
Olive oil
1-2 tsp Paprika
1-2 tsp Ground Cumin
Salt to taste
Handful of Basil Leaves (torn)
Instructions
Preheat oven to 180 degrees
Place all ingredients in a roasting pan
Toss with a generous glug of olive oil, balsamic glaze and season well
Bake for 30 minutes or until cheese is golden brown and vegetables are tender.
Before serving scatter over torn basil leaves.
