Because courgettes can be quite bland and watery I find it works particularly well in this simple spicy mince dish. Bite-sized pieces of courgettes are lightly stir-fried and then added to the ground beef together with sliced red peppers and cubed potatoes. It's a super easy dish which comes together quickly for a family-friendly weeknight dinner. Enjoy with a scoop of rice or some soft rotis.
Ingredients
Olive oil
1 Punnet Courgettes (Diced)
1 Onion (Finely Chopped)
1 Red Pepper (Diced)
Few Fresh Curry Leaves
500 gr Lean Ground Beef
2 Tsps Ginger and Garlic Paste
¾ Tsp Coriander Powder
¾ Tsp Cumin Powder
1 Tsp Chilli Powder
Salt to Taste
2 Potatoes (Optional)
Chopped Coriander (For Garnish)
Instructions
Heat 2 Tbles of olive oil over medium-high heat in a large saucepan.
Add the diced courgettes and cook, stirring occasionally, 5-7 minutes or until golden brown just tender. Remove to a plate.
