Add the aubergines and courgettes, increase the heat slightly and cook for 2-3 minutes. Stir in the peppers, Cover and cook over a very gentle heat for about 10 minutes.
Add the tomatoes, sugar, salt and pepper and cook for a further 15 to 20 minutes.
Remove ratatouille from heat.
Taste and adjust spices, salt and pepper if needed.
Add the roughly torn fresh basil and serve hot.
Serve with crusty bread,rice or pasta.
