Bran muffins are great as a portable breakfast. It has all the goodness without the guilt. The sugar in the muffins tenderizes and adds colour to bran muffins but it's not necessary to make it too sweet. In this recipe the sugar has been reduced without it affecting the taste. Feel free to add a bit more sugar if you prefer more sweetness. These bran muffins are both delicious, healthy and a great source of fibre.
Ingredients
  • 2 Eggs
  • 1 Cup Brown Sugar
  • ½ Cup Oil
  • 2 Cups Buttermilk
  • 1 Tsp. Vanilla Extract
  • 1 Cup Cake Flour
  • 11/2 Cups Nutty Wheat Flour
  • 11/2 Cups Bran
  • 1 Tsp. Cinnamon Powder
  • 21/2 Tsps. Bicarbonate of Soda
  • ½ Tsp. Salt
  • 1 Cup Raisins
  • ½ Cup Coconut Flakes
  • ½ Cup Chopped Walnuts
Instructions
  1. Preheat oven to 180°C.
  2. Beat eggs and sugar until light and creamy.
  3. Add oil and continue beating.
  4. Add buttermilk and vanilla extract and beat well for a few more minutes.
  5. Fold in the dry ingredients (flours, bran, cinnamon,bicarb and salt) and mix well.
  6. Fold in the raisins, coconut flakes, and chopped walnuts.
  7. Spoon the batter into prepared muffin pans and top with sesame seeds.
  8. Bake for 15-20 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
Makes approx 24 muffins
