LEEK AND POTATO SOUP

This leek and potato soup is simple and delicious just like a creamy bowl of perfectly seasoned comfort food! A smooth, creamy vegetable soup that's full of flavour. Make it into a meal with plenty of crusty bread or some of our delicious cheesy sweet corn fritters.
Ingredients
- 3 tbsps Butter
- 1 Onion Medium Chopped
- 2 Potatoes, Large Cubed
- 3 cups Leeks Sliced
- 3 Cloves Garlic Sliced
- 5 cups Vegetable Stock
- 1 cup Milk or Half Milk and Half Cream
- Salt and Freshly Ground Black Pepper
Instructions
- Heat the butter in a large pot and add the onions, potatoes, leeks and garlic.
- Cook with the lid on for approx 10 minutes until starting to soften.
- Add the vegetable stock and bring to the boil.
- Season well and simmer until the vegetables are tender.
- Cool for a few minutes, then pulse with a hand blender until smooth.
- Finally, add the milk and cream and bring to a simmer for a few more minutes and adjust the seasoning if needed.
- Serve hot, garnished with chives, or some grated cheese.
