LENTIL RICE PILAU

A tasty and comforting lentil rice pilau with caramelized onions. This pilaf is vegan-friendly and perfect to serve as a side with your favourite meat or vegetable curry!
Ingredients
  • 1 Cup Brown Basmati Rice
  • 1 Cup Brown Lentils
  • 4 Cups Water
  • 4 Tbsp Ghee
  • 3 Lrg Onions (chopped)
  • ½ Tsp Cumin Powder
  • ½ Tsp Coriander Powder
  • ½ Tsp Allspice Powder
  • 1 Tsp Cinnamon Powder
  • ½ Tsp Salt
Instructions
  1. Soak the basmati rice in water for 30 minutes.
  2. Meanwhile, in a medium pot place the lentils and cover them with the water. Bring to a boil to cook the lentils to al dente for 10 minutes. Turn off the heat and set aside.
  3. In a large frying pan heat the ghee and fry the chopped onion until soft and lightly golden. Reserve some for the top of rice and pour the rest on top of the lentils. Add in the drained rice all the spices and the salt. Bring the pot back to the heat and bring everything to a boil.
  4. Turn down the heat, cover and leave to simmer for about 12-15 minutes until all the liquid is absorbed and the rice is fully cooked. Leave covered until ready to serve.
Serve the pilau garnished with the crispy onions together with your favourite curry!
