This Indian savoury snack called Vada also known as Bhajia, Pakora, Lentil Fritters or in South Africa it might also be called a Chilli Bite is a South Indian fritter usually made with ground chickpeas or whole moong which has been soaked overnight.
It is generally made into a doughnut shape and it has a crispy exterior and soft interior. It is a very popular street food from the Indian subcontinent, but is eaten in different ways across states and generally eaten for breakfast or as a snack. In this recipe, I have used almond and coconut flour to turn this into an easy but delicious, but guilt-free low carb snack. So delicious when served with a low carb chilli sauce or an apple and green pepper sauce.

Ingredients
- 1 Cup Almond Flour
- ½ Cup Coconut
- 1 Tbsp Psyllium Husk
- 2 Tsp Xanthan Gum
- ½ Tsp Salt
- 1 Tsp Baking Powder
- 1 Tsp Cumin Seeds
- ½ Tsp Chilli Powder
- 1 Fresh Garlic Clove Grated
- 1 Cm Fresh Ginger Grated
- 2 Green Chillies Finely Sliced
- Handful of Chopped Baby Spinach
- ¼ Cup Chopped Coriander
Instructions
- Mix into a dough and make a ball. Leave aside for about 5 minutes. Pour about 2 tbsp coconut or olive oil over the dough and knead well. Make balls and flatten them into a doughnut shape. Fry in medium heat in coconut oil mixed with a little ghee.
- Enjoy with low carb sweet chilli sauce or apple and green pepper sauce.
