Mielies – also known as corn or maize – is a diet staple for many people around the world and has been the basis of African cuisine for ages!

Mielies are generally braaied or boiled and served on the cob. Mielie or corn soup is just another classic example of South Africa’s Rainbow Cuisine!
This creamy and slightly spiced soup has been prepared with fresh corn, tomatoes, red peppers and chilli flakes… and is incredibly delicious. It can be served with a crusty loaf or our delicious mielie bread.

Ingredients
  • 4 tbsp Butter
  • 1 large Onions chopped
  • 3 Garlic Cloves chopped
  • ½ Red Chilli Flakes
  • Salt to taste
  • 3 cups Corn Kernels, freshly cut from the cob
  • 2 Tomatoes chopped
  • 1 Red Pepper chopped
  • 4 cups Chicken Stock
  • 2 tbsp Corn Flour
  • 1 cup Cream
  • Chopped Basil for garnishing
Instructions
  1. Using a heavy bottomed pot, melt butter over medium-low heat. Add the onions and cook stirring ocassionally for approx.10 minutes until soft and translucent.
  2. Add the mielies, garlic, chilli flakes and chopped tomatoes and simmer over medium heat for approx 10-15 mins.
  3. Add the chopped red peppers.
  4. Add the chicken stock and cook over low heat for approx. 20 mins.
  5. Mix cornflour with a little cold water and stir through the soup.
  6. Stir in the cream and cook for 5 more minutes for it to heat through thoroughly.
  7. Garnish with chopped basil ribbons
  8. Serve hot!
