Who does not love a good chocolate cake! Perfect for any celebration the secret to a moist chocolate cake lies in replacing butter with oil and this recipe does just that.
Moist Chocolate Fudge Cake

Ingredients
- 2 cups(500ml) sugar
- 1 cup (250ml) oil
- 1 cup (250ml) warm water mixed with 2 tsps strong coffee
- 4 eggs seperated
- 2 cups (250ml) flour
- ½ cup (125ml) cocoa
- 2 tbles (30ml) baking powder
- ½ tsp salt
Chocolate Ganache Icing
- 180gr good quality dark chocolate
- 1 small tin of nestlé cream
Instructions
- Place sugar,oil warm water and egg yolks in a bowl and beat until the mixture is thick and cool.
- Sift the flour,baking powder,salt and cocoa together 3 times.
- Add the sifted ingredients to the oil mixture and fold in with a firm plastic spatula
- Whisk the egg whites in a clean bowl until just beginning to form peaks.
- Fold into the cocoa mixture.
- Divide the cake batter between the sandwich tins and bake in the oven for 30-40 minutes, or until the top is firm to the touch and a skewer inserted into the centre of the cake comes out clean.
- Let the cake cool completely before covering with icing.
Ganache Icing
- Heat the chocolate and cream in a saucepan over a low heat until the chocolate melts. Remove the pan from the heat and whisk the mixture until smooth, thick and glossy.
- Set aside to cool for a while or until thick enough to spread over the cake.
Notes
If using the ganache icing then just make a single layer cake and pour the ganache over.
