This perfect speedy week night chicken dinner, cuts down kitchen time without compromising on taste!. The chicken breasts are delightfully moist and tender and perfectly nestled under a blanket of salsa sauce.
Ingredients
  • 4 boneless chicken breast fillets
  • salt to taste
  • 1 teas garlic paste
  • 1 teas paprika
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • handful of freshly chopped coriander
  • 1 cup of chopped red and green peppers
  • 1 cup of chunky salsa
  • 1 cup grated mozarella cheese
Instructions
  1. Pre-heat oven to 180.C.
  2. Split each chicken breast into 2 and place into a baking dish.
  3. Season with salt, garlic paste, paprika,lemon juice and olive oil.
  4. Add coriander and chopped peppers. Spread the salsa over the top and bake for 30-40 minutes, or until the chicken is cooked through.
  5. Remove chicken from the oven and sprinkle cheese on top. Place it under the grill for 1-2 minutes until the cheese is melted and bubbly.
  6. Garnish with more coriander.
  7. Serve with brown rice and a green salad!
