ONE POT SALSA BAKED CHICKEN CASSEROLE

This perfect speedy week night chicken dinner, cuts down kitchen time without compromising on taste!. The chicken breasts are delightfully moist and tender and perfectly nestled under a blanket of salsa sauce.
Ingredients
- 4 boneless chicken breast fillets
- salt to taste
- 1 teas garlic paste
- 1 teas paprika
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- handful of freshly chopped coriander
- 1 cup of chopped red and green peppers
- 1 cup of chunky salsa
- 1 cup grated mozarella cheese
Instructions
- Pre-heat oven to 180.C.
- Split each chicken breast into 2 and place into a baking dish.
- Season with salt, garlic paste, paprika,lemon juice and olive oil.
- Add coriander and chopped peppers. Spread the salsa over the top and bake for 30-40 minutes, or until the chicken is cooked through.
- Remove chicken from the oven and sprinkle cheese on top. Place it under the grill for 1-2 minutes until the cheese is melted and bubbly.
- Garnish with more coriander.
- Serve with brown rice and a green salad!
