SPICY CHICKEN AND MAYO BREAD BASKETS

Bread baskets make fun finger food and are a great alternative to sandwiches. Simple and easy to make and no pastry needed! Who can resist these cute little bites?
Ingredients
- 12 slices white or brown bread, crusts removed
- 1 cup flaked cooked chicken
- ½ cup finely cubed red and green peppers
- ½ cup finely chopped onion
- 3 Tbles mayonnaise
- 1-2 Tbles hot sauce
- 2 eggs
- ½ cup milk
- 2 Tbsp chopped fresh coriander
- Salt and pepper to taste
- grated cheese
- 3 Tbles chopped chives
Instructions
- Preheat the oven to 180°C
- Grease a 12 tin muffin tray with cooking spray
- Use a rolling pin to flatten each slice of bread to at least half its regular thickness and cut out a 8cm circle.
- Press the bread rounds into the muffin tins.
- Mix the cooked chicken, mix peppers, chopped onion, mayo and hot sauce together and divide between the bread cases.
- Beat eggs, milk and coriander together. Season. Divide the egg mixture between the bread cases.
- Top with some grated cheese and chopped chives
- Bake for 15-20 minutes, until egg is set and bread cases are golden.
- Serve warm or cold.
