SPICY GNOCCHI WITH TOMATO AND BASIL

Gnocchi are essentially pillowy little floating clouds of comfort food! Deliciously Italian with a spicy twist this makes a perfect quick and easy midweek meal!
Ingredients
- 500gr Gnocchi ready made
- 1 tbsp Olive oil
- 1 Onion medium chopped
- 3 Garlic cloves, chopped
- 2 Chillies, finely chopped
- 1 tbles.Tomato paste
- 1 x 400g can Tomatoes chopped
- 2 tsp Brown sugar
- 1 handful English spinach leaves
- 1 handful Basil leaves
- Parmesan cheese for garnishing
Instructions
- In a saucepan, bring two litres of salty water to a rolling boil and drop the gnocchi.
- Boil for 2 minutes after they come to the surface of the water, then drain.
- In a saucepan fry the onion, garlic and chillies in the olive oil until soft and fragrant.
- Add the tomato paste, canned tomatoes and brown sugar, and simmer, stirring occasionally, for 25 to 30 minutes.
- When the tomato sauce is nice and thick stir through the gnocchi, spinach and basil and season with salt and freshly ground black pepper.
- Garnish with more chopped basil and some freshly grated Parmesan cheese and serve immediately.
