Because courgettes can be quite bland and watery I find it works particularly well in this simple spicy mince dish. Bite-sized pieces of courgettes are lightly stir-fried and then added to the ground beef together with sliced red peppers and cubed potatoes.
It’s a super easy dish which comes together quickly for a family-friendly weeknight dinner. Enjoy with a scoop of rice or some soft rotis.


SPICY MINCE WITH COURGETTES AND RED PEPPERS

Ingredients
  • Olive oil
  • 1 Punnet Courgettes (Diced)
  • 1 Onion (Finely Chopped)
  • 1 Red Pepper (Diced)
  • Few Fresh Curry Leaves
  • 500 gr Lean Ground Beef
  • 2 Tsps Ginger and Garlic Paste
  • ¾ Tsp Coriander Powder
  • ¾ Tsp Cumin Powder
  • 1 Tsp Chilli Powder
  • Salt to Taste
  • 2 Potatoes (Optional)
  • Chopped Coriander (For Garnish)
Instructions
  1. Heat 2 Tbles of olive oil over medium-high heat in a large saucepan.
  2. Add the diced courgettes and cook, stirring occasionally, 5-7 minutes or until golden brown just tender. Remove to a plate.
  3. Add another 2 Tbles of oil to the pan, and reduce the heat to medium and add the onion. Sauté until lightly golden brown and then add the red peppers and the curry leaves. Stir fry for another 1-2 minutes.
  4. Add the ground beef, ginger and garlic paste, coriander powder, cumin powder, chilli powder salt and cubed potatoes if using.
  5. Stir well and simmer for 8-10 minutes over medium heat adding a bit of water if needed.
  6. Add the courgettes back to the pan and cook, to heat throughout, for another 5 minutes or so.
  7. Garnish with chopped coriander and serve with rice or rotis.
